Processing stages
Meat processing machines by stage
A meat product usually passes through several machines, each doing one job: reducing the raw material, adding brine or marinade, filling and shaping, cutting, cooking, checking and packing. The cards follow those stages and open the matching machine type in our catalogue.
Treat them as a way to find equipment, not as a fixed line. Which stages you need, and how one machine should hand over to the next, depends on your product, volume and pack, so talk the layout through with our sales team before you specify anything.
Grinding and mincing
Automatic, mixing and universal grinders, plus grinding heads that mount on a vacuum filler.
Chopping and emulsifying
Bowl cutters that chop and mix in a rotating bowl, from coarse products to fine batters.
Brine injection
Needle injectors that put a measured amount of brine, cure or marinade into whole pieces of meat.
Filling and portioning
Vacuum fillers that meter a mass in portions of a set weight to a filling horn or attachment.
Cooking and smoking
Chambers that cook, dry and smoke product under controlled heat, humidity and air flow.
Inspection and weight control
X-ray, metal detection and checkweighing equipment that finds contaminated or out-of-weight items.
Working with chicken or other poultry? Our page on poultry processing equipment follows the same stages for marinated, formed and packed poultry products.
Machines
Core processing technologies
HP1 Vacuum Filler / Portioner
A versatile, double-screw filler and portioner that’s perfect for linking sausages, portioning soft and firm masses, and achieving weight-accurate results.
Robby Vacuum Filler
Built for small to medium batches, this vacuum filler delivers highly accurate portioning – from 1 g to over 1,000 g – making it ideal for butcheries, smallgoods, and specialty producers.
SL309 Loading Line
This high-speed loader system can handle up to 300 portions per minute, filling burgers, sliders, meatballs and more into a wide variety of trays.
AML273 Meatball / Sausage Loader
Automatically forms meatballs, croquettes or skinless sausages and loads them into trays — reducing manual handling and improving line efficiency.
Forming
Burger forming machines
A burger former turns ground meat into patties of the same weight, diameter and thickness. Several of the formers in our catalogue are fed by a VEMAG vacuum filler: the filler meters the mass and the former gives it its shape, so a change of size or shape is a change of plate, nozzle or setting rather than a different machine.
BF255 Burger Former
Round or oval burgers, with special shapes on request, from 50 g to 300 g and up to 130 mm across, at up to 40 strokes a minute. Described for beef, pork, poultry and meat-free masses.
FM250 Forming Machine
Burgers, rissoles, spiced mince fingers, ribs and nuggets. Quick-change forming nozzles or the vacuum filler’s portioning settings vary shape and size, at up to 300 portions a minute.
MPF818 Manual Former
Fits the filling horn holder of a VEMAG filling machine and forms round burgers 60–120 mm across and 10–30 mm thick, at around 20 portions a minute by hand.
Automatic Product Former 253
Round, oval or custom-shaped products from meat, vegetable or fish, for small and mid-sized producers.
After forming, the SL309 loading line above can place burger patties and sliders into trays. For mince packed in blocks or trays rather than patties, the MMP220 and MMP223 minced meat portioners work with HP series vacuum fillers.

Grinding
Grinders for fresh and frozen meat
Not every meat grinder takes frozen product, and the limits each manufacturer publishes differ from model to model. Some grinders cut frozen blocks, some need frozen meat pre-cut first, and others are described for fresh and slightly frozen meat only. Check the temperature and piece size of your raw material against the machine before you choose.
AU 200 U Universal Grinder
Cuts fresh meat, cooked meat and frozen meat blocks with the same working worm and cutting plate system. 200 mm hole plate and a 570-litre hopper.
AG 160 Automatic Grinder
A wide conical feeding worm takes fresh or cooked meat, pre-cut frozen meat and large pieces of meat or fat. 160 mm hole plate, up to 14,000 kg/h.
AV 250 Automatic Grinder
The automatic grinder with a 250 mm hole plate, described for fresh or cooked meat, pre-cut frozen meat and large pieces of meat or fat.
AE 130 Grinder
Processes fresh and slightly frozen meat, frozen pieces down to −10 °C, and cooked products. 130 mm hole plate, 3,000 kg/h.
Grinding can also happen on the filler. The Grinder 982 mounts on an HP series vacuum filler, grinds to final particle size and, with its separation device, removes bone, rind and sinew while the filler portions.
If you mix and mince your own product, our meat mixer grinder buyer’s guide sets out what to weigh up before you choose a machine.
Cutting
High-performance, fully automatic dicer
The Holac Cubixx 150 LP is a high-performance, fully automatic dicer designed for demanding industrial applications. Its hydraulic magazine loading and automatic feed support continuous cutting of meat, ham, sausage and other foods in loose or formed formats. With an output of up to 4,800 kg/h, it suits businesses that need a highly automated cutting solution for large quantities of food.

Support
Service, spare parts and product trials
A meat processing machine is only useful while it runs. Our service technicians cover Australia and New Zealand, our local Spare Parts Department identifies and supplies genuine parts, and at our Customer Centre you can test your own product on a range of machines under real production conditions.

Questions
Meat processing machine questions
Which meat processing machines do I need?
That depends on what you make, how much and how it is packed. A butcher making sausages, burgers and meatballs works mostly around a vacuum filler and its attachments, while bacon, ham and other whole-muscle products bring in injection, tumbling, cooking and slicing. Tell our sales team your products and volumes and they will point you to the machine types worth looking at.
Can a meat grinder process frozen meat?
Some can. In our catalogue the AU 200 U Universal Grinder is described for frozen meat blocks, the AG 160 and AV 250 automatic grinders for pre-cut frozen meat, and the AE 130 for frozen pieces down to −10 °C. Other grinders are described for fresh and slightly frozen meat only, so check the model’s published limits against your raw material.
Can one vacuum filler make both sausages and burgers?
Often, yes, with the right attachments. The HP1, for example, is built to supply interchangeable attachments for a wide range of meat and sausage products, and the MPF818 manual burger former fits any VEMAG filling machine. Which attachments suit a given filler depends on the model, so confirm the combination with us before you buy.
Do you look after meat processing equipment in New Zealand as well as Australia?
Yes. We have offices in Australia and New Zealand, and our service technicians, spare parts and sales support cover both countries.
