Brine Mixers & Storage Tanks

A brine mixer prepares the liquid that an injector puts into meat. Water is filled into the tank, and the dry ingredients, such as salt, curing salt, phosphates, sugars, starches and proteins, are added through a hopper. A venturi draws the powder into a fast-moving stream of water so it wets out immediately instead of forming lumps, and a pump or a high-shear mixer keeps the liquid circulating until the salts have dissolved and the other ingredients are evenly dispersed.

An evenly mixed brine matters for two reasons. Lumps and undissolved particles can block injector needles and filters, and the concentration of the brine, together with how much of it the meat takes up, decides how much salt and cure ends up in the finished product, so every batch has to be mixed the same way. Storage tanks hold the prepared brine and keep it moving so the ingredients do not settle, ready to supply one or more injectors through a shift.

Brine mixing systems are used by producers of bacon, ham, cured and cooked meats and marinated poultry, and are usually installed next to the injection line. The tank size is chosen to suit the number of injectors and the volume of brine each batch needs.
