Bowl Cutters & Emulsifiers

A bowl cutter chops and mixes product in a rotating bowl. As the bowl turns, it carries the material again and again through a set of curved knives mounted on a shaft that spins at high speed. Knife speed, bowl speed and the number of bowl rotations decide the result, from a coarse chop with visible pieces of fat for salami to a smooth, stable emulsion for frankfurters and other cooked sausages. Ice or chilled water is often added to keep the batter cold while it is cut.

Many bowl cutters can run under vacuum, which keeps air out of the batter and gives a denser product with fewer air bubbles. Table cutters with a small bowl suit butchers and product development kitchens, while larger floor-standing machines are loaded with a lifting device and emptied with an unloader.

An inline emulsifier does a similar job continuously: the product is drawn through a set of hole plates and cutting plates that reduce it to a fine emulsion, with no batch loading. Bowl cutters and emulsifiers are used to make cooked, smoked and dry sausages, pâtés, spreads and plant-based mixtures.
