Cheese portioning systems and dairy equipment
From soft spreads to firm cheese blocks and formed shapes, VEMAG technology delivers high precision for dairy processors. Our systems handle a wide range of viscosities and textures, enabling consistent portioning, forming and packaging.

Cheese portioning
Cheese portioning systems by product form
How cheese is portioned depends on the form it leaves the plant in. A firm block is cut into dice, sticks, flakes or shreds; shredded cheese is spread across a pizza or another product; a spread or other pasty mass is metered by weight and filled into cups or jars; and every portion is checked and packed. The cards below sort the cheese and dairy equipment in our catalogue by the job it does, and each one opens every machine of that type.
Treat them as a way into the catalogue, not as a line we have installed or a set of machines guaranteed to work together. Which stages you need depends on your cheese, how it behaves at the temperature you work it, and the pack you sell it in, so talk the process through with our sales team before you specify anything.
Cutting, dicing and shredding
Cheese cutters and multipurpose dicers that turn blocks and logs into dice, sticks, flakes and shreds of a consistent size.
Depositing
Shredding depositors that spread cheese evenly across a product, and can and jar fillers that place a measured portion into a container.
Portioning by weight
Vacuum fillers that meter a pasty mass by weight and push each portion out through a filling horn or an attachment.
Cutting and emulsifying
Bowl cutters and a continuous vacuum emulsifier that reduce and emulsify ingredients for smooth spreads and dips.
Weighing and inspection
Checkweighers, metal detectors and X-ray systems that find out-of-weight or contaminated portions before they are packed.
Packaging
Tray sealers, thermoformers and vacuum packaging machines, with shrink and drying equipment, that close portions and blocks into a sealed pack.
Cutting
Cutting blocks into dice, sticks and shreds
Diced and shredded cheese starts as a block or log. A dicer pushes it against a cutting grid and a cross blade cuts each layer off at the set length, so changing the grid changes the size and shape of the piece. Holac builds a dedicated cheese cutter as well as the Cubixx multipurpose dicers, and several Cubixx models name cheese in their own descriptions.
Cheesixx cheese cutter
Holac’s multifunctional cheese-cutting machine and the smallest in its cheese range. It cuts small, medium or large dice, sticks and flakes, and special shapes such as triangles and shreds.
Cubixx 100L dicer
A compact dicer on wheels with a fully sealed loading chamber and a two-part grid. Its description lists grated cheese among its jobs, alongside diced meat and ham strips.
Cubixx 120 dicer
A semi-automatic multipurpose dicer for loose and pre-formed products, cheese among them, with an integrated discharge conveyor and a touchscreen.
Cubixx 150 LP dicer
The largest of the Cubixx series, with a hydraulically opened magazine and a guillotine cut-off blade. It takes loose and pre-formed products, including cheese.
Our catalogue does not list a cheese slicer. For sliced cheese it lists packaging, such as the Ross tray sealers further down this page, so if you slice in house, tell us how you slice now and where the slices go next.
Depositing
Spreading shredded cheese across a product
On a pizza base or a similar product, the cheese has to land evenly from edge to edge with as little as possible wasted between products. A shredding depositor does the cutting and the spreading in one unit, laying the cheese across the product through a long depositing throat.
Shredder Cutter Depositor
An attachment designed to be used with a VEMAG pump. Its 48-inch depositing throat lays cheese across a product consistently and accurately, with very little waste, and the listing gives pizza as the example. A chiller built into the frame cools the forming heads and the cutter.
The listing gives a 480-volt, three-phase electrical supply, which is not the standard three-phase supply in Australia or New Zealand, so check the electrical specification with us before you plan around it.
Vacuum filling
Portioning cheese masses by weight
Soft, pasty dairy products are portioned by weight rather than cut. A vacuum filler draws the mass from its hopper into a double screw or rotary vane pump, takes air out of it on the way, and pushes out a set portion through a filling horn or an attachment. What is fitted to the outlet decides the product: a container filler, a depositor or a forming attachment.
The VEMAG HPnx vacuum fillers in our catalogue are listed for dairy and cheese processing. All three portion steplessly from 1 g to 99,000 g, and their filling capacity depends on the feeding element fitted.
HP10NX vacuum filler
A 250-litre hopper, 15 kW of rated power and a filling capacity of up to 4,300 kg/h.
HP20NX vacuum filler
A 350-litre hopper, 23 kW of rated power and a filling capacity of up to 8,900 kg/h.
HP30NX vacuum filler
A 350-litre hopper with a 40 m³ vacuum system, 36 kW of rated power and a filling capacity of up to 7,600 kg/h.
VPC716 checkweigher
Weighs every portion as it runs, regulates the vacuum filler from the result and sends out-of-tolerance portions off on an ejection belt. Built for minced products and forming lines, and listed in our catalogue under cheese blocks.
Whether a particular filler and attachment suit your cheese depends on its texture and the temperature you portion it at, so trial the combination before you settle on it.
For cream cheese balls and individual shaped portions, compare soft cheese forming equipment and prepare a product and tray specification.
Spreads and dips
Cutting, emulsifying and filling cheese spreads
A cheese spread or dip is made smooth first and portioned second. A bowl cutter chops and emulsifies a batch in a rotating bowl, while a continuous emulsifier works on a steady flow of material. The finished mass is then filled into cups or jars, where product left on the rim gets in the way of the seal.
K 60 High-Efficiency Cutter
A Seydelmann cutter with a 60-litre bowl and a six-knife head for fast reduction and emulsification. It is the one machine our catalogue lists for butters, and it is listed for cheese spreads, dips, snacks and sticks too.
KK 144 C Vacuum Konti Kutter
A Seydelmann continuous emulsifier with a hole and cutting plate system, built for fine emulsions. Its data names cheese, with baby food and pet food, as a further application.
FKL609 container filling system
Fills cans, jars and cups, and fits on all VEMAG vacuum fillers. A filling head with an inner pipe closure or a piston keeps the fill clean. Takes containers 100 mm across and up to 140 mm high, or 220 mm on request.
Can filling horn
Portions mixtures from liquid to highly viscous into a wide range of tin and jar formats and sizes while keeping the container edges clean. Product can be fed in from either side.
The FT722 filling table is also listed for cheese spreads and dips. It moves trays, tins and jars under the outlet so they are filled automatically, at up to 80 portions a minute, and is used mostly for desserts, fillings, creams and doughs.
Our buyer’s guide sets the K 60 and the KK 144 C beside the rest of the bowl cutter and emulsifier range, model by model.
Checking and packing
Checking, packing and finishing cheese portions
Before a portion is sealed it can be checked for weight and contamination. Besides the VPC716 checkweigher, our catalogue lists the Aicon XR-500 HD X-ray system for unpacked products and the Pulsotronic M-Pulse2pro Inflex 65, a mobile metal detector made to work with filling machines, for dairy and cheese.
For sliced cheese it lists two Ross tray sealers: the fully automatic IN 1100 for modified atmosphere (MAP) and vacuum skin (VSP) packs, and the X450, a compact, portable semi-automatic sealer for small processors, stores and food labs. For cheese blocks it lists the Supervac GK 1600 B belt vacuum packaging machine, the AT 6, AT 7, AT 8 and AT 15 shrink tanks and the BL 15 drying tunnel, and JLS robotic packaging systems are listed for shredded and diced cheese. Variovac thermoformers such as the Primus, which forms packs from film and seals them plain, under vacuum, under MAP or as skin packs, are tagged for dairy and cheese as well.
The Vetec Climamat, a climatic maturing and cold-smoking installation built to suit the product, the production capacity and the site, is also listed under cheese blocks.

Planning a cheese portioning line
Before you choose a cutter, filler or depositor, pin down how your cheese behaves at the temperature you work it, the shape and weight of the portion, the pack it goes into, the output you need, and what happens to the product before and after portioning. Those answers decide which stages you need and which machines are worth a trial.
